Ingredients

  • 1 kg thick beans (or 300 g frozen)
  • Salt
  • 1 Carrot
  • 100 g shallots
  • 2 Garlic cloves
  • 40 g smoked bacon, well-done
  • 2 tbsp olive oil
  • white pepper from the mill
  • a teaspoon basil
  • 8 slices toast bread
  • 100 g grated Parmesan
  • 4 tbsp heavy cream

Instructions

    Peel thick beans. Blanch in salted water for 3-4 minutes. Drain and set aside. Peel carrot and slice thinly. Peel shallots and garlic; finely dice garlic.

    Dice bacon and render crisp in a pan. Transfer bacon cubes to a plate. Add olive oil to the pan fat. Sauté shallots until translucent. Add beans and carrots, cook for 5-8 minutes. Season with salt and pepper. Finely chop basil leaves and fold into the mixture.
