Bean Beef Stew

The Bean Beef Stew from Spoonsparrow is a wonderful comfort dish for cold, rainy days.

Ingredients

  • 500 g beef stew meat
  • 2 tbsp oil
  • 120 g cannellini beans
  • Salt
  • Pepper
  • 1 bunch mixed herbs (bay leaf, parsley, sage)
  • 250 g waxy potatoes
  • 1 onion
  • 1 Garlic clove
  • 500 ml meat broth
  • 0.5 chili pepper

Instructions

    Soak the beans overnight in water covered. Drain them the next day. Peel and roughly chop the onion; peel the garlic. Wash, halve, and seed the chili pepper. Rinse the herbs and tie them into a bundle. Peel the potatoes and cut them into large pieces.

    Cut the beef into 2–3 cm cubes, season with salt and pepper, and brown in hot oil. Add the onion and garlic and cook until softened. Stir in the beans and place the herb bundle on top. Pour over the meat broth, add the chili pepper, cover, and simmer gently for about 40 minutes. Taste and serve.
