Ingredients

  • 300 g sea bass fillet
  • 1 tbsp Lemon Juice
  • 1 Zucchini
  • 2 shallots
  • 300 g fresh pineapple
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp olive oil
  • 100 ml Vegetable broth
  • 3 tbsp sour cream

Instructions

    Wash the sea bass fillet, pat dry with kitchen paper, halve it, drizzle with lemon juice and let rest covered for 10 minutes.

    Meanwhile wash, trim, quarter lengthwise and slice thinly the zucchini. Peel and dice the shallots. Peel the pineapple, remove brown eyes, and cut into pieces without the core.

    Pat the fish dry again, season with salt and pepper. Heat oil in a non-stick pan. Sear the fillets on both sides until golden brown. Remove and keep warm.

    Add shallots and zucchini to the same pan and sauté while stirring for 5 minutes until tender. Add pineapple and vegetable broth, reduce over medium heat for 3 minutes. Stir in sour cream to thicken. Return fish to sauce briefly to coat.
