Basilisk Berry Jam

The Basilisk Berry Jam from Spoonsparrow is perfect for breakfast.

Ingredients

  • 1 kg gooseberries
  • 100 ml apple juice
  • 500 g gelatin sugar (2:1)
  • 2 stalks lemon balm
  • 2 stalks basil

Instructions

    Clean jars and lids thoroughly. Sterilize them in a pot of boiling water for about 10 minutes, then let them dry on a clean towel.

    Wash and trim the gooseberries, place them in a large pot and crush with a pestle. Stir in apple juice and gelatin sugar, bring to a boil while stirring. Simmer for 4 minutes over medium heat until bubbling.

    Wash basil, shake off excess water, pluck leaves and cut into fine strips. Add to the jam and perform a gelling test. Pour the basilisk berry jam into the prepared jars and allow them to cool completely before sealing.
