Ingredients

  • 200 g potatoes (starchy, boiling)
  • 2 cloves garlic
  • 1 bunch Basil
  • 1 tbsp Crème fraîche
  • 50 ml olive oil
  • 2 tbsp lemon juice
  • Salt
  • Pepper (freshly ground)

Instructions

    Steam the potatoes in their skins for about 30 minutes. Peel, press through a potato masher and let steam off. Mix with finely chopped garlic, finely chopped basil, crème fraîche and lemon juice.

    Add enough olive oil to create a smooth cream. Season with salt and pepper.
