The Biscuit Meringues from Spoonsparrow enchant not only the little ones among us.

Ingredients

  • 5 egg whites
  • 200 g powdered sugar
  • a pinch salt
  • parchment paper
  • powdered sugar sprinkles

Instructions

    Whisk egg whites with powdered sugar and a pinch of salt until combined. Place the bowl over a pot of simmering water (double boiler) and beat until stiff peaks form, reaching about 50 °C. Remove from heat and continue beating on low speed to cool the mixture. Transfer the stiff meringue into a piping bag fitted with a round tip and pipe onto a sheet lined with parchment paper.

    Decorate with various powdered sugar sprinkles and bake in a preheated oven at 80 °C for at least 6–8 hours until completely dry. Keep the oven door slightly ajar during baking. Allow to cool, then store the meringues tightly sealed in an airtight container; they will soften if exposed to air moisture.
