Basilic Pasta Dough
This refined pasta dough with basil from Spoonsparrow is a great idea when guests arrive.
Ingredients
- 400 g spelt flour
- 4 eggs
- 1 tbsp Olive Oil
- 1 tsp salt
- flour (for working)
- 2 Handfuls Basil

Knead the flour, eggs and oil with salt into a smooth, supple dough. Add more water or flour if needed. Shape the dough into a ball and cover or wrap in a damp kitchen towel for 30 minutes.

Divide the dough into 3–4 pieces and knead each again. Roll each piece into rectangles with a rolling pin and then use a pasta machine or roll on a lightly floured surface to a knife‑thick sheet. Pass the dough through the pasta machine from setting 1 to 4.

Wash and pat dry the basil leaves. Place a few leaves on one half of the dough.

Lay the second half over it (with as little flour between as possible; or spray with water) and roll thin again using the pasta machine at settings 4 and 5 or a rolling pin.

Cut shapes with cutters or cut diamonds. Let the noodles dry covered on a lightly floured surface. Boil in salted water for 3–4 minutes and serve as desired.
