Basic Spritzgebäck

Quick dessert: Spritzgebäck is perfect for gifting, bringing along, and snacking.

Ingredients

  • 175 g soft butter
  • 75 g powdered sugar (from cane sugar)
  • 0.25 tsp Salt
  • 1 vanilla bean (pulp)
  • 1 Egg white
  • 150 g spelt flour
  • 50 g ground hazelnuts
  • 25 g cornstarch
  • 150 g dark chocolate (60% cocoa)

Instructions

    Preheat the oven to 180°C (160°C fan; gas: level 2-3). Mix butter with powdered sugar, salt, and vanilla pulp, then add egg white. Whisk until frothy. Combine spelt flour, hazelnuts, and cornstarch. Add this dry mix to the butter mixture and stir until incorporated.

    Fill a piping bag fitted with a star tip with dough and pipe 4 cm long sticks onto a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes until golden yellow. Remove from oven and let cool.
