Basic Minestrone

The basic minestrone recipe from Spoonsparrow is quick to prepare and always a delight for lunch or dinner!

Ingredients

  • 2 carrots
  • 300 g broccoli
  • 3 stalks celery
  • 2 Zucchini
  • 2 tbsp olive oil (20 ml)
  • 1 l vegetable broth
  • 300 g thick white beans (canned; drained weight)
  • Salt
  • Pepper
  • 50 g freshly grated Parmesan (37% fat in solids)

Instructions

    Peel the carrots and slice them into rounds. Wash the broccoli and cut it into florets. Wash the celery and cut it into pieces. Wash the zucchini, quarter lengthwise, and cut into pieces.

    Heat the oil in a pot and sauté the vegetables over medium heat for 2–3 minutes. Add the broth and bring to a boil. Drain the beans in a sieve, add them to the soup, and let it simmer gently for about 10 minutes. Season with salt and pepper.
