Broccoli Flan

Ingredients
- 800 g Broccoli
- 1 onion
- 1 tbsp Olive Oil
- 70 g crème fraîche
- 2 Eggs
- 2 egg yolks
- Salt
- Pepper (freshly ground)
- 1 tsp ground coriander
- butter (for the molds)
Instructions

Wash and trim the broccoli, separating florets from stems. Peel the stems and dice them small.

Peel and finely chop the onion. Heat olive oil in a pot and sauté the onions until translucent. Add the broccoli, stir briefly, then pour in half a cup of water. Cover and steam over medium heat for about 8 minutes.

Set aside some broccoli florets for garnish, then puree the remaining broccoli. Stir in crème fraîche, eggs, and egg yolks, seasoning with salt, pepper, and coriander.

Grease eight small ramekins or heat‑proof cups and fill them with the broccoli cream. Cover each with a little foil and place them in a pot.

Pour boiling water into the pot until it comes just below the rim of the ramekins. Bring to a gentle boil, then reduce heat and steam the flan covered over low heat for 30 minutes. The water should not boil.

Serve by pouring the broccoli flan from each ramekin onto plates, arranging two per plate and garnishing with fresh broccoli florets.
