Ingredients

  • 300 g barley
  • 1 large red onion
  • 2 tbsp capers
  • 1 bunch parsley (large)
  • 4 tbsp orange juice
  • 3 tbsp white wine vinegar
  • 6 tbsp Olive oil
  • Salt
  • ground pepper

Instructions

    Wash the barley thoroughly under running water, then bring 750 ml water to a boil and simmer covered over low heat for 25 minutes; drain and let cool.

    Peel and dice the onion.

    Wash parsley, shake dry, and chop.

    Whisk orange juice with vinegar, oil, salt, and pepper.
