Banana Waffles

Ingredients

  • 2 Bananas
  • 3 tbsp Lemon juice
  • 5 eggs
  • 2 tbsp Raw cane sugar
  • 0.5 tsp vanilla powder
  • 1 pinch salt
  • 200 g softened butter
  • 280 g spelt flour type 1050
  • 1 tsp Baking powder
  • 120 ml buttermilk

Instructions

    Peel the bananas and mash them with the lemon juice.

    Beat the eggs with the raw cane sugar and vanilla powder until frothy.

  3. 3.

    Add the salt, 180 g of butter, flour, baking powder, and buttermilk gradually, whisking well to combine.

    Cover the batter and let it rest for about 30 minutes.

  5. 5.

    Heat the waffle iron, brush with a little butter, and pour a small ladleful of batter into each section.

    Cook the waffles one by one, then keep them warm in a preheated oven at 80 °C (fan‑forced) if desired.

    Serve dusted with powdered raw cane sugar if you like.
