Ingredients
- 2 ripe mangoes
- 150 g sugar
- 1 untreated lemon (juice)
- 1 tsp cardamom
- 125 ml Coconut milk
- 125 ml heavy cream (at least 30% fat content)
- 4 passion fruits

Peel the mangoes, cut the flesh along the pit and slice a quarter of the flesh into strips for garnish.

Blend the remaining mango with sugar, lemon juice, cardamom, coconut milk, and cream until smooth. Pour the mixture into pre‑cooled sugar‑cone‑shaped containers and chill in the freezer for at least 4 hours.

Halve the passion fruits and scrape out the seeds with the pulp. Briefly dip the finished ice in hot water, plate it, pour over the passion fruit pulp, and garnish with mango strips.
