The Banana Protein Pancakes from Spoonsparrow are made without eggs and still let you start your day protein-rich!

Ingredients
- 2 Bananas
- 200 g oat flakes
- 150 ml oat drink (oat milk)
- 2 tsp Baking powder
- 200 g cream cheese (30% fat in the tub)
- 3 tbsp Coconut oil
- 500 g mixed berries
Instructions

Peel the bananas and mash them with a fork. Mix with oat flakes, oat drink, baking powder and 160 g cream cheese into a batter.

Bake the pancakes in three batches of four each, for a total of twelve. Heat 1 tbsp oil in a pan for each batch. Drop 4 spoonfuls of batter and cook on medium heat for about 3–4 minutes per side. Use up the remaining batter similarly.

Meanwhile, clean, wash and optionally cut the berries. Put 400 g berries and 2 tbsp water into a pot and bring to a boil for 2–3 minutes. Plate the banana protein pancakes with berry ragout, leftover cream cheese and remaining berries on plates and serve.
