Poppy Seed Quark Dumplings

Ingredients

  • 400 g quark
  • 2 Eggs
  • 75 g flour
  • 50 g semolina
  • 50 g white bread crumbs
  • 2 tbsp Sour cream
  • 2 tbsp sugar
  • 1 tsp lemon zest
  • Salt
  • 150 g ground poppy seeds
  • 2 tbsp sugar
  • 500 g elderberries
  • 1 stick cinnamon
  • 1 apple
  • 4 plums
  • 80 g sugar
  • 2 tbsp vanilla sugar
  • 2 tbsp Cornstarch
  • 2 tbsp rum

Instructions

    Drain the quark well and press if necessary. Mix with eggs, flour, semolina, bread crumbs, sour cream, sugar and lemon zest into a dough. If the dough is too wet, add more flour. Chill for about an hour.

    Meanwhile, rinse the elderberries and remove stems. Simmer them with about 250 ml water and cinnamon for roughly 20 minutes. Wash, peel the apple and dice it together with washed and pitted plums into small cubes. Add sugar and vanilla sugar to the compote and cook for another 10 minutes. Stir in cornstarch mixed with rum until smooth, then let thicken for a few minutes while still creamy. Remove from heat and cool.

    Take spoonfuls of dough, shape about eight dumplings each. Drop them into lightly salted simmering water and let cook for about 10 more minutes.

    Mix the poppy seeds with sugar on a plate.

    Lift the dumplings from the water with a slotted spoon, drain, and roll them in the poppy seed mixture until fully coated. Serve with the elderberry compote.
