Rum Cookies in Jamaican Style

- 5 tbsp Rum
- 100 g raisins
- 120 g coconut flakes
- 225 g flour
- 1 tsp Baking powder
- 75 g soft butter
- 75 g brown sugar
- 1 egg
- 80 ml heavy cream

Warm the rum slightly and soak the raisins and half of the coconut flakes in it.

Mix the flour with the baking powder. Beat the butter with the sugar until fluffy, then add the egg and cream gradually. Sift the flour mixture over the wet ingredients, stir to combine, and finally fold in the soaked raisins, rum, and coconut flakes. Let the dough rest for 1 hour, then shape small balls from it.

Roll each ball in the remaining coconut flakes, place them on a parchment-lined baking sheet, and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 12 minutes. Remove, let cool, and serve arranged in paper molds.
