Banana Caramel Tart

Ingredients

  • 200 g crumbly cookies
  • 100 g melted butter
  • 30 g Butter
  • 9 tbsp beetroot syrup
  • 160 ml condensed milk
  • 200 g sugar
  • 0.5 sachet vanilla sugar
  • 3 bananas (peeled and ripe)
  • 250 ml Whipping Cream
  • chocolate shavings

Instructions

    Crush the cookies in a blender and mix with melted butter. Press the dough into a tart pan and lift up the edges. Chill for about 1 hour.

    Meanwhile, melt the butter in a large pot. Add condensed milk, sugar, vanilla sugar, and beetroot syrup, stirring well. Cook over low heat until the sugar fully dissolves. Bring the mixture to a boil and continue cooking until the thermometer reads about 100–108°C.

    Let the caramel cool slightly and spread it over the base. Slice the bananas thinly and arrange them on top of the caramel.

    Beat the cream halfway stiff and spread it over the bananas. Sprinkle generously with chocolate shavings before serving.
