Meringue with Chocolate Chips

Ingredients

  • 5 egg whites
  • 300 g powdered sugar
  • 1 pinch salt
  • cocoa powder
  • 100 g chocolate drops

    Beat the egg whites with powdered sugar and salt until the mixture is white, glossy, and holds stiff peaks. Lightly color the meringue with cocoa powder, fill a piping bag fitted with a rosette tip, and pipe onto parchment-lined baking sheet.

    Sprinkle with chocolate chips and bake in a preheated oven at 80 °C for about 6 hours until fully dried out. Keep the oven door slightly ajar during drying. Let cool. Store the meringues sealed in an airtight container; they will soften when exposed to air.
