Ingredients

  • soft butter (for the baking pan)
  • 125 g walnut kernels
  • 75 g butter
  • 3 ripe bananas
  • 225 g sugar
  • 2 tbsp vanilla sugar
  • 1 egg
  • 180 g buckwheat flour
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 3 tbsp milk
  • 20 g almond sticks
  • 3 tbsp coarse brown sugar

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat and butter the cake pan.

    Coarsely chop the walnuts and melt the butter in a saucepan. Peel the bananas and finely puree them in a mixing bowl: combine with the liquid butter, sugar, vanilla sugar and egg, whisking well. Mix the buckwheat flour with baking powder and salt, then whisk into the batter with milk. Pour the batter into the cake pan and bake for about 1 hour until golden brown.

    Sprinkle the almond sticks with sugar on a kitchen towel. Remove the hot cake from the pan and roll it in the almond-sugar mixture. Let it cool on a wire rack before serving, optionally topping with gooseberries and oranges.
