Banana Bread with Walnuts
The vitamin-rich banana bread with walnuts from Spoonsparrow is a must-try. It's delicious without refined sugar!
Ingredients
- 300 g wheat flour type 1050
- 1 sachet Baking Powder
- 0.5 tsp Salt
- nutmeg
- 150 g walnuts
- 500 g ripe bananas (3 ripe bananas)
- 1 vanilla pod
- 1 apple
- 80 g Butter
- 50 g Coconut sugar
- 1 egg

Sift the flour, baking powder and salt into a mixing bowl. Rub in a little nutmeg directly.

Finely chop the walnuts with a food processor or a large knife and add them to the flour mixture.

Peel the bananas, cut them into small pieces, put them in a bowl and mash them with a hand mixer or a fork.

Make a lengthwise cut in the vanilla pod, scrape out the seeds and stir them into the banana puree.

Wash, grate the apple and whip it with butter and coconut sugar in a bowl using the whisk attachment of a hand mixer, then stir in the egg. Then gradually fold in the banana puree and flour mixture alternately into the butter mixture.

Grease a small loaf pan (approx. 8x22 cm) if necessary. Fill with batter and smooth with a rubber spatula.

Bake in a preheated oven at 175 °C (Fan: 150 °C, Gas: Level 2) on the middle rack for 50-60 minutes. Insert a wooden skewer into the center of the cake: if it comes out clean, the cake is done; otherwise, bake for a few more minutes.

Remove the finished bread from the oven, let it cool in the loaf pan for 5 minutes, then invert.
