American Blueberry Muffins

Ingredients

  • 250 g fresh blueberries
  • flour (for dusting)
  • 250 g flour
  • 2 tsp Baking powder
  • 60 g Butter
  • 1 egg
  • 3 tbsp honey
  • 120 g yogurt
  • 100 g Sour cream

Instructions

    Rinse, wash and drain the blueberries. Dust with flour and gently pat dry.

    Preheat oven to 180°C fan. Place 12 paper cups into a muffin tin.

    Mix flour with baking powder. Melt butter and let it cool slightly so it remains liquid. Whisk together egg, honey, yogurt and sour cream; fold in melted butter. Stir in the dry mixture and fold in blueberries until well combined.

    Fill the cups with batter and bake for 25-30 minutes until golden brown. Let rest in the tin for 5 minutes before removing to cool on a rack. Serve warm or at room temperature.
