Coconut Almond Balls

Ingredients
- 325 g flour
- 100 g Ground Almonds
- 75 g coconut flakes
- 1 pinch salt
- 100 g sugar
- 1 vanilla pod (aroma)
- 250 g cold butter
- 125 g white couverture chocolate
- 3 tbsp coconut flakes

Mix the flour with the almonds, coconut flakes, salt, sugar and vanilla aroma in a bowl. Add the butter in small pieces and rub everything between your hands into crumbs. Quickly knead into a smooth dough and wrap it in cling film; chill for about 30 minutes.

Preheat the oven to 175 °C (350 °F) with upper and lower heat. Line two baking trays with parchment paper. Take small portions of the dough, roll them into balls about 3 cm in diameter, and place them on the trays a little apart. Bake for about 15 minutes, keeping the balls pale. Remove and let cool.

Chop the couverture chocolate and melt it over a hot water bath. Dip the balls in the chocolate, set them on parchment paper, sprinkle with coconut flakes, and let dry.
