Banana Bites with Shrimp and Avocado

Ingredients
- 1 Avocado
- 1 tbsp Lemon Juice
- Salt
- Pepper (freshly ground)
- 2 cooking bananas (or green bananas)
- 80 ml plant oil
- 8 large shrimp
- 1 Garlic clove
- cilantro leaves (for garnish)

Halve the avocado, remove the pit, scoop out the flesh and mash with a fork. Mix the puree with lemon juice and season with salt and pepper.

Preheat the oven to 100 °C fan. Cut each banana into pieces about 4–5 cm long.

Heat plenty of oil in a pan and add the banana pieces. Fry for several minutes, turning occasionally, until they turn light brown. Then place each slice on a manual lemon press and squeeze to form a small basket shape. Flip the banana shells again in hot oil in the pan, then keep warm in the oven.

Wash and clean the shrimp, then fry them in the remaining oil in the pan. Add the pressed garlic and cook for about 3 minutes.

Remove the banana shells from the pan, spoon some avocado mash onto each one, top with a shrimp, garnish with cilantro, and serve immediately.
