Marinated Bell Peppers
Grilled bell peppers are wonderfully easy to prepare as an antipasto. They contain several antioxidants in high concentration.
Ingredients
- 400 g bell peppers (1 red, 1 yellow, 2 bell peppers)
- 1 Garlic clove
- 0.5 Organic lemon
- Salt
- Pepper
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- 0.5 bunch tarragon
- 20 g Parmesan cheese (1 piece)
- 80 g smoked turkey breast (sliced)
Instructions

Halve the bell peppers, remove seeds and wash them. Place them on a baking sheet with the curved side up and grill under the oven broiler until the skin blisters.

Meanwhile peel and finely chop the garlic. Rinse half a lemon hot, grate about half of its zest finely and squeeze out the juice.

Moisten a kitchen towel. Cover the bell peppers with it and let them cool. Then remove the skin, cut the peppers into wide strips and arrange on a plate.

Whisk together lemon juice, grated zest, salt, pepper, balsamic vinegar, and olive oil in a small bowl. Drizzle over the bell peppers and let sit for about 15 minutes.

Wash tarragon, shake dry, pluck leaves and chop.

Grate parmesan. Sprinkle tarragon and parmesan over the pepper strips. Roll smoked turkey breast into roulades and arrange with the peppers.
