Ingredients

  • 800 g fresh fig
  • 1 untreated orange
  • 2 rosemary sprigs
  • 5 thyme sprigs
  • 500 ml white balsamic vinegar
  • 2 tbsp sugar
  • 1 tsp salt

Instructions

    Wash and dry the figs, then cut them in half. Wash the orange hot and peel two 5 cm long thin strips of zest. Rinse and shake dry the rosemary and thyme.

    Heat half the vinegar in a small pot, add the sugar and salt, and place the figs in the hot vinegar.

    Place the herb sprigs and orange zest in two heat‑proof jars, add the figs, and pour the hot vinegar over them until everything is fully covered. Seal well and let steep in a cool place for 2 weeks.
