Ingredients

  • 1.5 kg tomatoes
  • 2 onions
  • 1 Garlic clove
  • 1 small Mango (300 g)
  • 2 tbsp olive oil
  • 3 tbsp maple syrup
  • 1 tbsp mustard seeds
  • 1 tsp mild curry powder
  • 4 tbsp tomato paste (60 g)
  • 70 ml orange juice
  • 2 tbsp Apple cider vinegar
  • Salt
  • Pepper
  • 0.25 tsp smoked paprika powder
  • a pinch cinnamon

Instructions

    Clean, wash tomatoes, cut off stems and dice them. Peel onions and garlic and cube finely. Peel mango, separate flesh from pit and dice.

    Heat oil in a pot. Sauté onions, garlic and mango over medium heat for 2 minutes. Pour maple syrup over and stir for 5 minutes to lightly caramelize. Add mustard seeds and curry powder and sauté for 3 minutes. Add tomatoes, tomato paste, orange juice and vinegar, stirring occasionally, and simmer gently for about 30 minutes until reduced. Season ketchup with salt, pepper, paprika and cinnamon.
