Shrimp Cocktail with Avocado and Mango

Ingredients
- 120 g mayonnaise
- 2 tbsp ketchup
- 10 ml cognac
- 1 tsp horseradish (jar)
- Lemon juice
- Worcestershire sauce
- Salt
- Cayenne pepper
- 1 small ripe mango
- 0.25 head lettuce
- 16 large shrimp (prepped, with tail segment)
- 2 tbsp olive oil
- 1 ripe Avocado
- 1 tbsp chives sprigs

Whisk mayonnaise with ketchup, cognac and horseradish until smooth; season with lemon juice, Worcestershire sauce, salt and cayenne pepper. Peel the mango, remove the flesh from the pit and dice it small. Strip the lettuce leaves, discard the core, wash, dry and cut into bite‑sized pieces. Season the shrimp with salt and pepper and sear in a hot pan with oil for about 2 minutes until golden brown.

Halve the avocado, remove the seed, scoop out the flesh with a spoon and slice it thinly.

Arrange lettuce, avocado slices, mango cubes and shrimp in small bowls; drizzle with sauce. Sprinkle with chives before serving.
