Ingredients

  • 400 g pork tenderloin
  • 100 g mushrooms
  • 2 Spring Onions
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp clarified butter
  • 2 tbsp chopped parsley
  • 1 Garlic clove
  • 4 slices toast bread
  • 125 g mozzarella

Instructions

    Wash the pork tenderloin, pat dry and cut into ~2 cm thick slices. Clean the mushrooms and slice them as well. Trim and wash the spring onions, then cut into rings.

    Season the meat with salt and pepper and brown it in hot clarified butter for about 3-4 minutes until golden. Remove. Sauté the mushrooms and spring onions in the remaining fat for ~4 minutes, seasoning with salt and pepper. Add parsley and crushed garlic, cooking briefly more.

    Slice the mozzarella into rounds.

    Toast the bread slices. Arrange the mushroom and pork on top. Cover with cheese and bake under a preheated grill for about 2 minutes until the cheese melts. Serve immediately.
