Irish-Style Potato Pancakes

Ingredients
- 500 g waxy potatoes
- 2 Eggs
- 225 g spelt whole‑grain flour
- 1.5 tsp Baking Powder
- 300 ml buttermilk
- Salt
- Pepper
- 20 g butter (1 heaping tbsp)
Instructions

Wash two thirds of the potatoes and cook in boiling water for about 20 minutes. Then drain, cool, peel, and press through a potato masher.

Meanwhile, peel, wash, grate the remaining potatoes and squeeze out excess moisture with a kitchen towel.

Separate the eggs. Mix yolks with flour, baking powder, mashed and grated potatoes, and buttermilk. Season with salt and pepper.

Beat the egg whites with a pinch of salt until stiff peaks form and fold into the batter.

Melt some butter in two pans. Pour half the batter into each pan and cook over medium heat for about 4 minutes per side until golden brown, topping with butter flakes as you go.
