Ingredients

  • 4 large portobello mushrooms
  • 2 red bell peppers
  • 20 ml olive oil
  • Salt
  • Pepper
  • 80 g blue cheese
  • 8 slices white bread
  • 0.5 handful basil
  • 120 g spreadable cheese

Instructions

    Preheat the oven to 200°C (400°F) with upper and lower heat.

    Clean the Portobello mushrooms and remove stems. Clean the bell peppers and slice into strips. Toss pepper strips with 1 tbsp oil, brush mushrooms with remaining oil, and arrange both on a parchment-lined baking sheet. Season with salt and pepper and bake in the oven for 15-20 minutes.

    Dice the blue cheese and sprinkle over the mushrooms during the last 5 minutes of baking. Bake the bread slices until crisp for about 5 minutes as well.

    Rinse the basil, strip leaves, and cut into fine ribbons.

    Remove everything from the oven, let the bread cool briefly, then spread the spreadable cheese on each slice. Place a Portobello mushroom on top, distribute pepper strips, and sprinkle with basil ribbons. Cover with the second bread slice and serve.
