Apricot Breads with Goat Cheese

Ingredients

  • 4 Apricots
  • 0.5 Vanilla bean
  • 1 tsp Honey
  • 2 slices Rye wholemeal bread
  • 30 g Goat cheese
  • Salt
  • Pepper
  • 1 sprig rosemary

Instructions

    Wash the apricots, halve them, remove the pits and cut the apricot halves into strips. Split the vanilla bean in half and scrape out the seeds. Add together with the honey and apricots to a saucepan and sauté over low heat for 3 minutes.

    In the meantime, spread both slices of bread with goat cheese and season with a little salt and pepper. Wash the rosemary, shake it dry and pluck the needles. Distribute the apricot strips on the bread slices, sprinkle with rosemary needles and serve.
