Baked Spiral Noodle Nest

Ingredients
- 300 g spiral noodles
- 2 shallots
- 1 Garlic clove
- 2 zucchini (yellow and green)
- 100 g salami
- 10 black, pitted olives
- 300 g mozzarella
- 3 tbsp olive oil
- 400 g canned diced tomatoes
- 100 g heavy cream
- 2 tsp capers
- 1 tbsp oregano
- Salt
- Pepper
Instructions

Cook noodles al dente according to package instructions; drain.

Peel and finely chop shallots and garlic.

Wash zucchini, trim ends, dice into small cubes.

Slice salami into thin strips.

Cube mozzarella. Divide the shallot mixture into thirds; sauté each portion in 1 tbsp oil separately. In the first portion combine half the tomatoes with capers and cream, simmer until creamy; season with salt and pepper.

In the second portion add zucchini cubes, oregano, salt, and pepper.

In the third portion mix salami, remaining tomatoes, and olives; let it gently simmer, then season with salt and pepper.

Wrap noodles into nests on a greased baking sheet. Alternately spoon one tablespoon of each sauce over the nests, top with mozzarella, and bake under a preheated grill in the oven for about 10 minutes until golden.
