Ingredients
- 400 g linguine
- 300 g shrimp
- 2 Tomatoes
- 2 Zucchini
- 2 Garlic cloves
- 2 tbsp parsley
- Salt
- pepper (ground)
- olive oil
- 1 peppercorn

Wash zucchini and slice into thin rounds. Peel garlic and dice finely. Wash tomatoes, halve, core, and cut into wedges. Wash peppercorn, halve, core, and slice lengthwise into strips. Heat 4 tbsp oil in a pan and fry zucchini slices until golden yellow. Add garlic and shrimp and sauté for 1-2 minutes.

Add tomato and peppercorn strips and cook briefly. Season with salt and pepper. Meanwhile, cook linguine in plenty of salted water to al dente. Drain and return to pot. Add pan contents and stir. Pour an additional 2 tbsp olive oil and parsley. Adjust seasoning with salt and pepper and serve immediately.
