Baked Chicken with Potatoes, Vegetables, Feta and Sage

Ingredients
- 100 ml olive oil
- 5 cloves garlic
- Salt
- Pepper (freshly ground)
- 2 tbsp chopped sage leaves
- 8 whole sage leaves
- 1.2 kg chicken (1 whole chicken)
- 600 g small waxy potatoes
- 250 g carrots
- 200 g shallots
- 1 bunch spring onions
- 150 g sheep cheese

Whisk olive oil with pressed garlic, salt, pepper and chopped sage.

Wash the chicken, pat dry and cut into pieces; coat generously with sage oil and let marinate for at least 3 hours.

Peel potatoes and halve lengthwise. Peel carrots and cut diagonally into 2 cm long pieces. Peel shallots. Toss vegetables with remaining oil and arrange in a baking pan, interspersing the chicken pieces. Roast in preheated oven at 220°C (428°F) for about 40 minutes, turning vegetables and meat midway.

Wash spring onions, trim ends, cut into 2 cm lengths and sprinkle over the dish during the last 10 minutes along with crumbled sheep cheese and fresh sage leaves.
