Baked Shrimp with Tomato Sauce

Ingredients
- 12 medium raw shrimp (in shell, headless)
- 1 Shallot
- 2 Tomatoes
- 1 pinch saffron strands
- 2 Garlic cloves
- 3 tbsp olive oil
- 1 small dried chili pepper
- Salt
- ground pepper
- 20 ml brandy
- mint for garnish

Rinse the shrimp cold and pat dry. Peel and finely dice the shallot. Blanch the tomatoes, peel, quarter, deseed, and dice. Soak saffron in 2 tbsp warm water. Peel the garlic.

Heat olive oil in a pan over high heat and sear the shrimp for 1/2 minute per side. Remove and keep warm in a baking dish. Sauté the shallot and whole garlic on medium heat until translucent, add tomatoes and simmer. Stir in chili pepper (seeded if desired) and saffron with soaking water, bring to boil, season with salt and pepper. Spread the mixture over the shrimp. Drizzle brandy and bake at 220°C in the center for 10 minutes.
