Ingredients
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp Apple cider vinegar
- 0.5 bunch herbs (thyme; oregano and or Jamaican thyme)
- half chilled watermelon
- 200 g feta cheese, cubed
- 10 black olives, pitted
- arugula, cleaned
- 1 tsp pumpkin seeds, dried
- 1 tsp sunflower seeds, roasted
Instructions

Whisk olive oil, lemon juice, and vinegar vigorously and add a few torn thyme leaves. Chill.

Using an ice cream scoop, cut balls from the watermelon flesh.

Arrange watermelon cubes, feta, olives, herbs, arugula, pumpkin and sunflower seeds decoratively in the hollowed watermelon, drizzle dressing over and serve immediately.
