Salmon and Vegetable Skewers

Ingredients

  • 4 large, firm potatoes
  • Salt
  • 1 yellow zucchini
  • 1 green zucchini
  • a handful of parsley
  • 500 g salmon fillet
  • 2 tbsp lemon juice
  • pepper (ground)
  • 4 tbsp olive oil

Instructions

    Peel, wash, and cut the potatoes into about 4 cm cubes. Blanch in salted water for 15-20 minutes, then drain, rinse with cold water, and let dry.

    Wash the zucchinis, trim ends, and use a vegetable peeler to slice thinly. Wash parsley, shake dry, pull leaves from stems, and finely chop. Rinse salmon, pat dry, cut into 4 cm cubes, drizzle with lemon juice, then season with salt and pepper and toss on a small flat plate in the parsley.

    Skewer alternating pieces of salmon, zucchini slices, and potatoes onto long skewers. Heat olive oil in a large pan and brown the skewers all around for about 6 minutes. Plate and serve immediately.
