Baked Salmon with Broccolini
Baked salmon with broccolini by Spoonsparrow brings Asian flavors and plenty of vital nutrients to the plate – including many omega-3 fatty acids.
Ingredients
- 600 g salmon fillet
- 2 Garlic cloves
- 5 g ginger root
- 1 red chili pepper
- 4 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp brown rice syrup
- 2 tbsp red chili paste
- 1 tbsp toasted sesame oil
- 3 tbsp light sesame oil
- 400 g broccolini
- Salt
- 40 g light sesame seeds (3 tbsp)

Wash and pat salmon fillet dry. Peel garlic and ginger, then roughly chop both. Clean the chili pepper, wash it, and slice into rings. In a bowl combine soy sauce, fish sauce, brown rice syrup, red chili paste, toasted sesame oil, and 2 tbsp light sesame oil; stir well. Add garlic, ginger, and chili, mixing thoroughly. Place salmon in the mixture, cover, and marinate in the refrigerator for about 1 hour, turning once.

Meanwhile clean broccolini, wash it, and blanch in salted water for 1–2 minutes. Drain, shock in cold water, then let drain fully.

Remove salmon from the marinade and lay on a baking sheet lined with parchment paper. Stir remaining marinade with sesame seeds, brush over salmon, and bake in a preheated oven at 200 °C (180 °C fan) for about 10 minutes.

Take salmon out briefly, arrange broccolini stems around it, drizzle stems with leftover oil, then return to the oven for another 5–10 minutes. Remove and serve salmon with the vegetables.
