Ingredients

  • 400 g red barbel (1 barbel)
  • 1 orange (unprocessed)
  • 4 kaffir lime leaves
  • Sea salt
  • pepper (from grinder)
  • 40 ml orange liqueur
  • 1 tbsp grape seed oil

Instructions

    Wash the red barbel and pat dry.

    Zest the orange and cut three large slices.

  3. 3.

    Season the inside of the barbel with salt, pepper, and half the zest. Season the outside similarly.

    Place orange slices on a sheet of aluminum foil and lay the barbel on top. Cover with kaffir lime leaves and sprinkle remaining zest. Drizzle oil over the fish. Fold up the edges of the foil, pour in orange liqueur, seal tightly, and bake in a preheated oven at 180°C for about 30 minutes.
