Baked Pumpkin Slices with Garlic

Easy to prepare and delicious as dinner or lunch, perfect for take‑out.

Ingredients

  • 1 kg butternut pumpkin (or Hokkaido)
  • Salt
  • Pepper (freshly ground)
  • 3 Garlic cloves
  • olive oil (for brushing)
  • balsamic cream (optional)

Instructions

    Preheat the oven to 200°C fan‑forced. Grease a baking sheet with olive oil.

    Cut the pumpkin in half, remove seeds, peel and slice into 1–2 cm wide strips.

  3. 3.

    Brush the slices all over with a little olive oil and season with salt and pepper.

  4. 4.

    Arrange the pumpkin pieces on the baking sheet.

  5. 5.

    Peel the garlic cloves, finely dice them and sprinkle over the pumpkin. Roast for 20–30 minutes, turning 2–3 times. Transfer the roasted pumpkin to a serving dish.

    Optionally drizzle balsamic glaze over the pumpkin and mix gently.
