Baked Pumpkin

Try the delicious baked pumpkin from Spoonsparrow – easy to prepare, aromatic and versatile. Perfect as a side dish or main course!
Ingredients
- 1.2 kg pumpkin flesh (from butternut squash)
- 8 sprigs thyme
- 0.5 tsp Coriander seeds
- 0.5 tsp cumin
- coarse Sea salt
- Cayenne pepper
- 2 tbsp liquid butter
- 3 tbsp olive oil
- 1 tbsp Maple Syrup

Preheat oven to 200°C (convection 180°C; gas: level 3). Cut pumpkin flesh into 3-4 cm cubes. Rinse thyme, shake dry, pluck leaves from 4 sprigs and finely chop. Split remaining sprigs into small pieces.

Finely crush coriander and cumin in a mortar and add to pumpkin with chopped thyme. Season with salt and pepper, add butter and oil, mix well. Place in a baking tin lined with parchment paper and bake for about 35 minutes.

Drizzle baked pumpkin from the tray with maple syrup and serve garnished with remaining thyme.
