Ingredients
- 6 Eggs
- 50 ml heavy cream
- 2 tbsp crème fraîche
- 400 g spinach
- 1 clove garlic (finely chopped)
- Salt
- Pepper (freshly ground)
- nutmeg (ground)
- 50 g black olives (pitted and roughly chopped)
- 1 tbsp Olive Oil
- 100 g Feta

Wash, trim, and rinse the spinach; blanch it in lightly salted boiling water until wilted, then drain, shock in cold water, and let dry. Squeeze out excess moisture and roughly chop.

Whisk together eggs, cream, and crème fraîche; season with salt, pepper, and nutmeg.

Sauté spinach and garlic in hot olive oil; pour in the egg mixture and sprinkle crumbled feta and olives on top. Cover and cook over low heat for about 5-6 minutes until set. Flip and serve.
