Zucchini Frittata in the Oven

The zucchini frittata is simply baked in the oven. Try this delicious recipe from Spoonsparrow!
Ingredients
- 2 zucchinis
- 12 eggs
- 1 handful freshly chopped parsley
- 50 ml heavy cream
- Salt
- black pepper (freshly ground)
- 250 g feta cheese
- 1 Garlic clove
- 2 tbsp olive oil

Preheat the oven to 180°C fan-forced and line a baking dish with parchment paper.

Wash, trim, and slice or julienne the zucchini. Whisk the eggs with parsley and cream, seasoning with salt and pepper. Cube the feta. Peel and finely chop the garlic. Sauté the garlic in 2 Tbsp hot oil for a moment, then add the zucchini and cook for 1–2 minutes. Pour the egg mixture over the zucchini, add the feta, and stir briefly. Bake for about 15 minutes until set.

Remove the frittata from the oven and serve it cut into cubes or pieces.
