Baked Pineapple from Spoonsparrow: Sweet-melting delight from the oven
Ingredients
- 1 ripe pineapple
- 1 Vanilla bean
- 40 g raw cane sugar
- 50 ml brown rum (or orange juice)

Peel the pineapple and remove the hard core in the center. Place the pineapple in a baking dish and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 30 minutes.

Meanwhile, split the vanilla bean in half and scrape out the seeds. Mix the vanilla seeds with sugar and rum. Warm this mixture in a saucepan until the sugar dissolves.

Set the oven to grill mode, brush the pineapple with the rum mixture, and grill until it caramelizes golden brown. Insert the scraped vanilla bean into the core hole as garnish and serve.
