Ingredients

  • 200 g poultry liver
  • 1 onion
  • 1 EL Butter
  • 2 EL breadcrumbs
  • 1 egg yolk
  • 1 TL freshly chopped thyme
  • Salt
  • pepper (ground)
  • sherry
  • 2 aromatic pears (well ripened)
  • 2 EL lemon juice
  • 100 g lingonberries (jar)
  • basil (for garnish)

Instructions

    Rinse the liver, clean it, pat dry and cut into small pieces. Peel and finely dice the onion. In a hot non-stick pan, sauté in butter until translucent. Add the liver and cook for about 2 minutes. Transfer to a bowl.

    Preheat the oven to 180°C (350°F) with both fan and top heating.

    Mix breadcrumbs with egg yolk and thyme, then combine into the liver mixture. Season with salt, pepper, and sherry. Wash the pears, halve them and remove the core with a melon baller. Brush with lemon juice. Fill each pear half with the liver mixture and place on parchment-lined baking tray. Bake in the oven for about 20 minutes until golden brown. Plate the pears, top each filling with about 1 tsp lingonberries, garnish with basil, and serve.
