Baked Paprika Chicken Thighs

Ingredients

  • 2 fresh chili peppers
  • 2 lemons (juiced)
  • 1 tsp paprika powder
  • 100 ml olive oil
  • pepper (ground)
  • 1.2 kg chicken thighs
  • Salt
  • 4 Garlic cloves
  • 4 small onions
  • 4 red bell peppers

Instructions

    Preheat the oven to 200°C.

    Wash the chili peppers and cut them lengthwise in half. Remove stems and white seeds. Finely chop the chilies.

    In a bowl combine lemon juice, chopped chilies, paprika powder and olive oil; stir well. Season generously with pepper. Coat the chicken pieces with the mixture and marinate covered in the refrigerator for about 1½ hours, turning once during this time.

    Remove the marinated chicken from the liquid, drain, salt around it and place together with half of the remaining marinade in a baking dish. Bake on the second rack from below for about 45 minutes until crisp. Baste the chicken with the rest of the marinade midway. Meanwhile peel garlic cloves and onions; slice garlic thinly and quarter onions. Wash bell peppers, halve, deseed and cut into pieces. Add them during the last 25 minutes. Serve hot.
