Roasted Chicken with Herbs French Style

Ingredients
- 1 French country hen (ca. 1.4 kg)
- Salt
- colorful peppercorns
- 1 handful mixed herbs (e.g., sage, rosemary, thyme)
- 250 ml dry white wine
- 1 tbsp honey
- 50 g butter
- 1 tbsp freshly chopped herbs (thyme and rosemary)

Preheat the oven to 180°C (350°F) with fan and top heat.

Rinse the chicken and pat dry. Season the inside with salt, fill with 1 tsp peppercorns and the herbs. Tie with kitchen twine, place in a roasting tin, pour some wine over it. Melt honey with butter in a small pan, add 1 tsp pepper, season, and brush the chicken. Roast for about 75 minutes until golden brown, brushing with butter and drizzling with roast juices repeatedly. Add more wine or water as needed.

Sprinkle with freshly chopped herbs before serving. If desired, remove the twine, take out the herbs, and slice or quarter the chicken.
