Baked Pancakes Filled with Spinach and Mozzarella

Ingredients
- 150 g flour
- 300 ml milk
- 2 Eggs
- 1 pinch salt
- butter (for frying)
- 1 Shallot
- 1 Garlic clove
- 50 g bacon
- 400 g spinach leaves
- 1 tbsp Vegetable oil
- Salt
- nutmeg
- 200 g mozzarella
- 2 tbsp butter
- 40 g grated Parmesan

For the pancakes whisk flour with milk until smooth, fold in eggs and season with salt. Let rest for about 15 minutes. Heat a little butter in a pan and cook each pancake thinly, about 8 per batch.

Preheat oven to 200°C fan.

For the filling peel and finely chop shallot and garlic. Dice bacon. Wash, trim and chop spinach. Sauté shallot, bacon and garlic briefly in hot oil. Add spinach and cook until wilted and liquid evaporated. Season with salt and nutmeg, let cool. Cube mozzarella, mix into spinach, then spoon onto pancakes. Arrange in a greased baking dish, dot with butter chunks, sprinkle parmesan on top, and bake for about 15 minutes.
