- 800 g parsnips
- 3 tbsp olive oil (for the tray and to drizzle)
- Salt
- Pepper (freshly ground)
- 150 g crème fraîche
- 2 tbsp mixed chopped herbs (e.g., mint, basil, chervil)
- 2 tsp lemon juice
- basil (for garnish)
Instructions

Preheat the oven to 200°C (400°F) with upper and lower heat.

Peel, clean, halve parsnips lengthwise and arrange on an oiled baking tray. Season with salt, pepper, drizzle with olive oil, and bake in the preheated oven for about 25 minutes, turning occasionally.

Meanwhile whisk crème fraîche with chopped herbs and lemon juice; season with salt and pepper to taste.

Serve baked parsnips on plates, garnish with basil leaves, and top with crème fraîche.
