Baked Cod with Pasta

Ingredients
- 600 g cod fillet
- Salt
- Pepper (freshly ground)
- Lemon juice

- 250 g mixed vegetables (e.g., carrots, cauliflower, corn, sugar snap peas, mushrooms)
- 150 g grated fresh Gouda cheese
- 2 tbsp butter
- Salt
- Pepper
- 1 tbsp chopped chives (cut into small rolls)
- 1 tbsp sharp mustard
- 50 g butter
- 200 ml heavy cream
- Salt
- Cayenne pepper
- 500 g green band pasta

Prepare the vegetables, sauté in a pan with butter, add a little water, season with salt and pepper, cover and simmer for about 5 minutes.

Wash the cod fillet, pat dry, portion, season with salt and pepper, drizzle with lemon juice. Heat oil in a non-stick pan and sear the fillets on both sides for 2 minutes each. Transfer to a heatproof dish. Spread the vegetables over them, sprinkle cheese on top, and bake at 250°C until the cheese is melted and lightly browned.

For the sauce melt butter over low heat, whisk in mustard, add cream and stir further. Season with salt and cayenne pepper, fold in chives.

Cook the band pasta according to package instructions in plenty of salted water.
